Broccoli Rice from TraceyandJate

2 cups chicken broth
1 tablespoon butter
1 cup white rice
1 box chopped frozen broccoli, defrosted and squeezed dry in kitchen towel
Bring broth and butter to a boil. Add rice and stir to combine. Bring liquid back to a boil, reduce heater and simmer 15 minutes. Add the broccoli and cook rice for another three minutes. Fluff with fork.
Notes – I add some salt, pepper, parsley and garlic powder or fresh garlic to the broth and butter mixture for extra flavor. This is definitely a favorite in our house.
