Chicken and Spinach Bake from TraceyandJate
4 boneless chicken breast halves
1 tablespoon EVOO
1 teaspoon garlic powder
1/2 teaspoon salt and pepper
Frozen chopped spinach, defrosted and drained
2 eggs slightly beaten
1/2 cup flour
1/2 teaspoon red cayenne pepper
fresh garlic to taste
2 tablespoons butter melted
1/2 cup white wine
6 oz. chicken broth
2-3 tablespoons lemon juice
Preheat oven to 350 degrees. Mix flour and seasoings. Dip the chicken in the flour mixture and then into the egg batter. Heat large skillet over medium high heat. Add EVOO and garlic, saute chicken until browned on both sides. Remove chicken from pan and place into baking dish.
Rinse and squeeze liquid from the spinach and spoon over the chicken. Drizzle with melted butter. Deglaze chicken pan with liquids, simmer for a few minutes and then pour over the chicken. Top with mozzarella cheese and bake 12-15 minutes.
Notes – I use thin sliced chicken breasts because I prefer thinner pieces of chicken. Also, I use a pan that can be put directly into the oven. I just take the chicken out of the pan and place on a plate while I make the sauce. Once the sauce is finished, I add the chicken back into the pan and top with the spinach and cheese.
