Mini Quiche

You will need mini muffin pans and a 2 1/2 inch biscuit cutter for this recipe.
 
Cooking Spray
1 1/2 cups shredded cheese
1/2 cup milk
1 box Pillsbury pie crust
2 eggs
1/4 teaspoon sald and pepper
Add any other ingredients to customize the quiche. I typically crumble precooked bacon to add or put broccolli in it. You can pretty much add anything to make them yummy.
 
Preheat overn to 375 degrees. Spray the muffin pan with cooking spray.
 
Remove crust from package. Place on a cutting board, using the 2 1/2 inch round biscuit cutter, cut out as many circles from the dough as possible. Place 1 round in each muffin cup, pressing down and up the sides. Place approx 1 tablespoon of cheese in each muffin cup and top with other ingredients (bacon, broccoli or whatever you choose for the filling)
 
In a 2 cup measuring cup, mix milk, eggs, salt and pepper with a fork until well blended. Pour mixture into crusts leaving 1/4 inch of space between mixture and the top of the pan.
 
Bake 25 to 30 mins or until quiches are golden brown.
