Parmesan Ritz Chicken

Parmesan Ritz Chicken from AKBrideinMD

1/2 C. Mayo (I use FF)
1 Tbsp. lemon juice
1/4 C. grated parmesan cheese
25 crushed Ritz crackers (about one cup)
4 small boneless, skinless chicken breasts

Preheat oven to 400 degrees.

Combine mayo and lemon juice in a small bowl. In a separate bowl, combine the parmesan cheese and crushed crackers. Dip each chicken breast into the mayo mixture, and then into the cracker mixture, making sure all sides are coated. Place chicken breasts on an ungreased baking sheet. Cook for 20 minutes, or until cooked through (In my oven it takes about 22-23 minutes).
