Pumpkin Chocolate Chip Cookies from TheLinkBride

2 1/4 cups all-purpose flour
1 1/2 teaspoons pumpkin pie spice
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup (2 sticks) butter or margerine, softened
1 cup granulated sugar
1 can (15 ounces) 100% pure pumpkin
2 large eggs
1 teaspoon vanilla extract
2 cups semi-sweet chocolate chips
1 cup chopped walnuts (optional)

Preheat oven to 375. Grease baking sheets. Combine flour, pumpkin pie spice, baking powder, baking soda and salt in medium bowl. Beat butter and granulated sugar in large mixer bowl until creamy. Beat in pumpkin, eggs and vanilla extract. Gradually beat in flour mixture. Stir in chocolate chips and nuts. Drop by rounded tablespoon onto prepared baking sheets. Bake for 15 – 20 minutes or until edges are lightly browned. (the nestie I got the recipe from only baked hers for about 13 minutes but I baked mine for about 17). Cool on baking sheets for 2 minutes; remove to wire rack to cool completely. Spread or drizzle with vanilla glaze (see below).

Vanilla Glaze:
Combine 1 Cup powdered suger, 1 and 1/2 Tbsp milk, and 1/2 Tbsp vanilla extract in a small bowl; mix well.

    My MIL does this in a loaf pan as pumpkin bread and I’m pretty sure it’s virtually the same recipe. I made these this weekend, and I thought they were more like muffin tops than cookies, but they were easy and delish! I brought a plate of them to work today, and everyone loved them!
