Chicken-Bacon Nuggets

This is a tried and true recipe used for almost all my get-togethers. The source is my mom.

2 large skinned and boned chicken breast halves
8 bacon sliced, but into thirds
1/2 cup orange marmalade
1/4 cup soy sauce
2 T sesame oil **
1 t ground ginger
1 garlic clove, minced
Vegetable cooking spray

Cut chicken breasts into 24 1-inch cubes. Wrap each chicken cube with bacon and secure with a wooden toothpick.

Stir together orange marmalade, soy sauce, sesame oil, ground ginger, and minced garlic in a large tupperware dish. Add chicken nuggets to dish. Seal with lid and chill 2 hours, turning/shaking occasionally.

Coat a rack and broiler pan with cook spray (or line the bottom of pan with foil). Place chicken nuggets on rack in broiler pan.

Bake at 450 degrees for 10 minutes, turn, and bake 10 more minutes. Enjoy!!

**My mom uses sesame oil. I couldn’t find it in the grocery store, so I just used vegetable oil. It turned out fine.
