Scallops with Lemon and Bacon from Linzee

Scallops
3 strips of bacon
Fresh leaf parsley
Lemon
Salt & Pepper

Chop bacon into pieces and fry until golden brown. Remove bacon from skillet with slotted spoon and reserve bacon grease. Pour bacon grease into large nonstick skillet and heat on high. When fat is hot place scallops in the pan (blot dry w/ a paper towel before). Let cook on one side for at least 3-4 minutes before moving at all. Flip over to other side and cook an additional 2-3 minutes. Turn off heat and add 1/4 tsp lemon zest, 1 tbs lemon juice, bacon pieces and 1 tsp finely chopped parsley. Combine, stir and then serve.
