Baked Potato Soup

“Panera’s” Baked Potato Soup from xmaryrickx
4 cups chicken broth
4 cups peeled and cubed potatoes
1/4 cup minced onion
1/2 teaspoon seasoning salt
1/4 teaspoon pepper
1/4 teaspoon ground red pepper (I skipped this)
1 (8 ounce) package cream cheese, cut into chunks
Directions
Combine broth, potatoes, onion, and spices.
Boil on medium heat until potatoes are tender.
Smash a few of the potatoes to release their starch for thickening.
Reduce to low heat.
Add cream cheese.
Heat, stirring frequently, until cheese melts.
*My changes. I used Chicken Stock. That is what I keep in the house and it worked great. Also, I put a little butter (maybe a tsp.) in the pot and sweated the onions for a while before adding the stock/potatoes/spices. Gave it a little more flavor. Also, I added some bacon crumbles…mmmmhhhh, bacon….when serving.
