Egg White Breakfast Sandwich from lauraanddave

Whole wheat/whole grain bread or whole grain English muffin
Eggs
Sliced tomato
Low-fat mozzarella or other cheese
Pepper
Basil

Separate egg yolks from egg whites and scramble egg whites
Layer egg whites, cheese, tomato, and basil on toasted whole grain bread – can eat as a sandwich or open-faced
Top with pepper if desired

*Sometimes we nix the basil and add a couple slices of avocado to this – there are lots of ways to make a healthy, delicious breakfast sandwich
