German Pancake from Bailey1806
This recipe comes from my mother-in-law and is the sole reason we registered for a cast iron skillet.
4 Large Eggs
1/2 cup milk
1/2 cup flour
1/2 tsp. salt
1/2 stick butter
Preheat oven to 425.
Melt butter in cast iron skillet over medium heat.
While butter is melting, measure flour and salt, add milk and mix well.
Add eggs one at a time, beating thoroughly after each egg.
Pour mixture into melted butter and cook over medium heat until you can run a spatula around the edges.
Put into preheated oven and bake for 20 minutes, until puffy and golden brown.
Pancake will puff up and shrink slightly when cool.
Sprinkle with powdered sugar and cut into wedges.
We also serve it with syrup.
Option: I made this when a friend came over and she preferred lemon juice on hers. To each her own!
