Pasta Primavera

Pasta Primavera from lauraanddave
Source: lauraanddave’s dad/old family recipe

1 box any kind of pasta
8 cloves chopped garlic
1 medium onion, minced
1/2 cup freshly chopped parsley
20 fresh basil leaves – dried won’t work in this recipe
1 cup white wine
2 tomatoes, peeled and chopped
1 cup asparagus tips
Large handful trimmed broccoli florets
1 cup fresh green peas
1 cup French cut carrots
1 red bell pepper, sliced

Have a pot of boiling water ready for then the saute is completed.
Saute garlic and onions in a bit of olive oil until onions are a bit transparent.
Add the wine, tomatoes, parsley, and basil and simmer for 5 minutes.
Blanch the vegetables in the boiling water (about 20 seconds) and drain immediately.
Add veggies to the sauce you’re sauteing, and mix with the pasta.
Note: If you try to cook the veggies in the sauce instead of blanching them, they’ll absorb the liquid in the sauce and will be mushy.
